TAPENADE is the all-day Mediterranean dining restaurant of the newly opened Discovery Primea in Makati. It is named after the centuries-old Mediterranean recipe of olives, capers, olive oil, and anchovies.

The concept comes from the insight that Filipinos love Mediterranean cuisine as much as Chinese cuisine–if you count the number of Chinese restos vs. the collective number of all Mediterranean restos (including Italian, French, Spanish, Greek, etc.) in Manila.

It’s refreshing to see these newer hotels elevate their restaurant concepts and not just going the usual all-day buffet route.

It was the night before the opening of Madrid Fusion Manila; Chef Juan Carlos de Terry hosted a Spanish dinner with Brandy de Jerez pairing.  

Brandy de Perez is a protected designation of origin for brandy that is only produced in the Jerez area of Andalusia, Spain. This appellation include the “sherry triangle” of  Jerez de la Frontera, El Puerto de Santa María and Sanlúcar de Barrameda, in the province of Cádiz (where Chef JC Terry originally comes from). Chef Alvin Leung is a three Michelin Stars chef of Bo Innovation in Hong Kong. He is known as the “Demon Chef” for his playful spirit and approach to his X-treme Cuisine. He is the mentor of Chef Jordy Navarra of Black Sheep fame.

Chef Jordy and Demon Chef collaborated on a four hands one-night only dinner at Black Sheep with the theme: X-treme Filipino during the first Madrid Fusion Manila!

Chef Elena Arzak is a Spanish celebrity chef of the three Michelin-starred and World’s No. 8 restaurant, Arzak. One of the world’s most admired female chefs based in San Sebastian, Spain, she was recently in the country for the first time for Madrid Fusion Manila.

Chef Chele of Vask hosted a Kulinarya Arzak collaboration dinner as an homage to Chef Elena and to give Manileños a taste of the Arzak experience.

CALDERON Makati is the third Spanish tapas bar and restaurant by Chef Monchet Carballo of Salcedo Market’s famed Sabor de Espana

We enjoyed our Calderon dinner at the original location so much that we decided to try out the new dishes in the Makati branch with Chris Urbano of the YouTube Channel Maputing Cooking. Chris brought along some Pizzini Australian wines and shared with us a few tips on how to pair these with the tapas.

SUSI is a green gastronomy, plant-based restaurant by Bianca Mabanta with a 100% vegan and gluten-free menu. It’s located beside the most carnivorous restaurant in Burgos Circle in BGC–Burgers & Brewkies. #contrast #irony

The concept was inspired by Bianca’s passionate conviction for sustainable living, by being vegan by choice and not using any leather products. It was also driven by necessity as she cannot eat anything with gluten because of Coeliac disease.

“Susi” is tagalog for key, which is in line with their vision of unlocking the secret to sustainable living. 

I was impressed by how yummy the vegan dishes were, and how sexy their design is. It’s going to be the hottest restaurant in BGC this Summer 2015.

TAMBAI: Sari-Sari Store Converted into Yakitori Snack House (A Review) #TambaiSessions


TAMBAI is a sari-sari store that has been converted into a Yakitori hangout by Melvin Viceral (brother of Maricel Laxa), Franco Ocampo, and Chef Jerome Valencia. 

Its name is a Japanese-inspired take on the Filipino term “tambay“, which means to hang out–derived from the English words “stand by“.

It’s a cool place to stop by for pre-dinner tapas (they open at 5pm) before moving on to your dinner event.
