KAM’S ROAST PH: Secret Menu – Pei Pa Duck!

Kam’s Roast Ph has a secret menu! It’s Pei Pa Duck marinated with 25-year aged orange peel, then butterflied and bathed in oil. The result? An extremely super crispy skin, with meat juicy and tender with fat, that’s bursting with flavor!

Kam’s Roast is an internationally-acclaimed and Michelin-starred restaurant in Hong Kong popular for their HK roasts. In Hong Kong, Kam’s roast is best known for their goose, but given the constraints of importation of poultry from China, Kam’s Roast Ph serves something close to roast duck, which is just as flavorful and succulent, especially when it comes with my favorite plum sauce.

Foodee Global Concepts, the group behind Tim Ho Wan, Tsuta Japanese Soba Noodle, and Todd English Food Hall is responsible for bringing the famous roasts to Manila.

Here’s why we love Kam’s new secret dish…

Nespresso Freestyle Moments by Bruce Ricketts (Photo Essay)

Freestyle with Chef Bruce-15.jpg

We feel honored to have witnessed the culinary evolution of Bruce Ricketts and we always look forward to tasting his passion on the plate.

Looking back at my archives, I realized we’ve covered almost all of our foodie moments with Bruce’s culinary creations like fanboys. We met him during his Food Truck by Chef Broosy days in 2012 before he retreated to BF after a failed stint at Robot. We have fallen in love with his food ever since.

• SENSEI SUSHI by Chef Bruce “Broosy” Ricketts (2012)
• MECHA UMA: “Absurdly Delicious” Food by Chef Bruce Ricketts! (2014)
• OOMA-licious! Bold Japanese Comfort Food by Chef Bruce Ricketts @Ooma_PH @SMMegaMall (First Look) (2015)
• LA CHINESCA BF: A Taste of Chef Bruce Ricketts’ First Love–Mexican Food! (Review) (2017)
LA CHINESCA GRID: The Grid: A First Look at Rockwell’s Food Market! (2018)

It was awesome to have a taste of how a passionate culinary master would do a branded collaboration for the first time with Nespresso’s Master Origin coffee series. Aside from the memorable orgasmic creations, I learned a lot on how branded collaborations should be executed as a master would.

This is another story for the blogging history books, a living tribute to a culinary lodi in Manila.

8 Unique Pasalubongs to Bring Home from Your Next Trip to Bicol

OAP-BicolPasalubong-4239

Bicol has always been a popular destination for both local and international travelers, as it is home to one of the most beautiful works of Mother Nature. Although shy to show its tip on most days, the Mayon Volcano’s perfect cone structure has continued to attract all forms of tourists.

This region is also popularly known for their cooking – especially when it comes to coconut or chili-based dishes. So much so that they have started to package the popular Bicol Express, Pinangat, and Inulukan in frozen bags for people to take home. While those alone already make for the perfect pasalubong, why not try other unique items?

Here are some pasalubong ideas I spotted on my last visit…

Siama Hotel: Beauty In Simplicity

Untitled
Siama Hotel is one of the most visually stunning and beautifully designed hotels that we’ve had the pleasure of visiting.  Inspired by the charming countryside of Sorsogon PHL, Siama seamlessly blends natural and modern architecture into a space that is calm and relaxed yet, at the same time, bold and welcoming.

Sustainability and nature, which are reflected throughout the entire hotel, were the main inspirations that went into the design.

Locally sourced materials were used in its construction, and great care was taken to ensure that the hotel has as small an impact on the surrounding environment as possible.

But looks alone isn’t what makes Siama one of our favorite hotels. The service and food are top-notch, and Siama is a great starting point if you plan to visit the many tourist attractions in Sorsogon.

Untitled
Quietly tucked away on the outskirts of Sorsogon City in the Province of Bicol, Philippines, Siama is a destination perfect for those who appreciate nature, great food and great company.

Epic Siargao Adventure (Food and Travel Guide)

NSsiargao35

Not many places in the Philippines have captured the hearts and minds of travelers quite like Siargao has.  It’s an Island paradise—the mere mention of its name instantly brings up thoughts of white sandy beaches, crystal clear waters, coconuts trees and perfect waves.

The island attracts people from all over the world from all walks of life. This is due in part to the world-class surf and the rich biodiversity of the surrounding waters which have drawn in surfers and sports fishers alike.

There is so much to do and see here despite its being a small island in the Pacific, and we suggest putting Siargao in your bucket list and knocking it off as soon as possible.

Pepper Tree at The Popup Katipunan-65.jpg

PEPPER TREE is an Indian Filipino Fusion restaurant by Hiro, who retired from his BPO career to pursue his goal of opening an Indian restaurant.

The Indian food is quite good because it is based on their family recipes, and they import their own spices so as not to compromise on flavor.
