Tarlaqueña is a family catering and services owned by Ms. Dinna Tolentino.
Their best-selling dish is the Callos Ala Tarlaqueña, a recipe passed down by her grandmother from Tarlac. Callos or Ox tripe stew was introduced here in the Philippines during the Spanish Colonial era. Tarlaquena's Callos used the traditional cooking method "siga" or slow cooking using an open fire. It is flavored with spicy chorizo and is quite rich, thick and sticky.
