AQUA Boracay: The Secret of Boracay’s Best Day Pool Club!

Aqua Boracay is the best Day Pool Club in Boracay not only because of its Pool Party events but because it serves one of the best Spanish-inspired beach cuisines by Chef Chele Gonzales of Gallery by Chele fame.

Most people miss out on Aqua because they think it’s an exclusive private club where there’s nothing to do if there are no pool party events. Some think it is closed for construction. What they don’t know is that this is, in fact, one of the best places to eat and enjoy a pool party in the New Boracay.

Here are the secrets of the best day pool club in Boracay…

 

First Things First

It is easily accessed via e-trikes (₱120 special trip) passing through the back end of Balabag Lake at the back of D’Mall.

The Day Pool Club is open but the rooms are still under construction.

Aqua is located at the beachfront along the back beach called Bulabog.

This part of the island is nice during high tide and feels like a hideaway from the busy White Beach.

Day Pool Club

Aqua Boracay’s Day Pool Club is open to the public daily from 11 am to 8 pm. You can also just dine and enjoy Chef Chele’s Sexy Pool Menu.

If you are going to use the pool, there is a 500/head entrance fee.

But if you are going to just eat, you can go directly to the restaurant without a fee.

You have to get a cabana (6-8 capacity) for 8,000, beds (2 capacity) for 4,000, or at least a table (2-4 capacity) for 2,000, consumable for food and drinks.

Boracay Dj  T & Jack play cool beach tunes every day from 4-8pm for that pool party ambience.

We loved hanging around the giant bubble pool or just hopping lazily from one pool area to the next.


Sexy Pool Menu by Chele

I would go here just to eat and enjoy Chele’s beach cuisine while reveling in the pool party vibe.

It is open at 11.00 am (for lunch) until 8.00pm daily.

We were impressed with the consistent food quality of Spanish Chef Jaime Ramos—Chef Chele’s head chef in Aqua Boracay.

(The young Spanish chef was imported directly from the Madrid restaurant scene. And, yes, he is still single and he lives in Boracay. 🙂

Starters

Lobster Nachos
Lobster Nachos (₱695). Fried Tortilla chips layered with our blend of cheeses, topped with pico de gallo, Black Beans, cilantro and sliced jalapeño peppers with sour cream

The nacho chips stay crunchy throughout your conversation with friends. It is generously topped with lobster meat, melted cheddar cheese; bits of salsa of onions, tomato, cucumber; a bit of sweetness from the pineapple; a bit of spice from the Jalapeño and garlic parsley olive oil to complete its tropical goodness. Ang sarap!

The nachos will blow your mind, and each table has this. Don’t forget to scrape off the umami off the lobster brains to completely finish this off.

Grilled Shrimp Tacos
Grilled Shrimp Tacos (₱425). Served with Frijoles, Truffle Creme Fraiche, Pickled Shallots and Filipino Mango Puree.

A big chunk of shrimp wrapped in tacos with a bit of mango puree and shallots. Best with drops of lemon. So good! (You can eat the tacos in two bites.)

Coconut Tempura Prawns
Coconut Tempura Prawns (₱650) with Wasabi Mayo and Nori Strips

Loved the play of fried prawn coated in desiccated coconut with bits of Japanese mayo and nori.

Mini Lobster Roll
Mini Lobster Roll (₱685) served with Hollandaise, Garlic and Crispy Leeks

Cute mini brioche bread made in-house with lobster and hollandaise as palaman sprinkled with spring onion.

Wagyu - Philly Melted Cheese
Wagyu – Philly Melted Cheese (₱725). Paired with duxelles mushroom, sauteed capsicum and onion, cajun spiced fries and selection of pickled seasonal vegetables.

The wagyu is cooked and seasoned well, topped with cream of cheddar, red capsicum and champignon mushrooms plus served on a bed of Spanish fries with cajun spice.

This is a full meal in itself. A bit heavy, so best to divide the ciabatta bread into two to share.

 

Gambas al Ajillo (Mac & Cheese)
Gambas al Ajillo (Mac & Cheese) (₱595). Shrimp cooked in olive oil with garlic and chili service with pasta and blend of cheeses

I loved the spice, garlic and pieces of shrimps in my mac & cheese—a nice twist to this comfort classic.

The drinks program is still being developed by a famed mixologist from Bali. Can’t wait!

Flatbreads

Pastrami Flatbreads
Pastrami (₱450). Our homemade Pastrami topped with bbq and tomato sauce, mozzarella cheese and pickled cucumber

If you like pizza to share, they serve an oval shaped thin flatbread with toppings of house-made pastrami, pickled cucumber, hand-made bbq sauce and onions.

It’s good to share, and request to have it crunchier on the ends.


Mains

Seafood Paella
Seafood Paella (₱695). A Traditional Spanish paella using our fresh local seafood

Most people love their Spanish Paella with a thin layer of Japanese rice with soccarat (caramelized rice crust), topped with shrimp, clams, prawns and drops of aioli.

The rice is not burnt and good to eat in itself, but it’s best to eat it with a bit of seafood meat and garlicky mayo.

Grilled Steak with Crispy Garlic & Fries
Grilled Steak with Crispy Garlic & Fries (₱1,495). US Certified Angus Beef High Choice paired with sauteed asparagus and mushroom, capsicum confit and traditional Spanish style fries

We love our steak cooked medium. They serve it thinly sliced already, so that you can enjoy sharing it with friends. Garlicky, it’s best to eat with a slice of mushroom and asparagus.

Desserts

Banana Split
Banana Split (₱450). Our modern take on this classic consist of caramelized banana, chocolate cremaux, paired with strawberry and vanilla infused with orange ice cream, served with homemade chocolate chip cookies

Your classic Banana Split served Chef Chele-style with each piece prepared to perfection from the house made ice cream to the cookies and banana cue. Ang sarap to end the meal with this.

Yoghurt Mousse
Yoghurt Mousse (₱325). Lemon sponge cake and ale granita

This is your typical deconstructed cake. It could use more color and personality though.


The Miami Suite

Aqua Boracay features the legendary Miami Room Suite with its own pool where you can have a private pool party celebration with close friends.

It has a spacious living room where you can watch Game of Thrones or your favorite movie with friends.

It is a two bedroom-suite with minimalist design and it opens into the private pool.

Each room has a bathtub and a window view of what’s going on in the bathroom.

You’ll enjoy the infinity pool with your special someone in the morning as the sun rises on the horizon.

After your breakfast pool session, the chef prepares your preferred breakfast in the comfort of your dining area.


Final Thoughts

Aqua Boracay’s Sexy Pool Menu is one of the best beach cuisines we’ve tasted on the island, so don’t miss to try it on your next visit in Boracay. Chef Chele’s main restaurant Sea.Food and Qitchn are not operational yet, and I can’t wait to see the making of one of Boracay’s best restaurants.

Order the Lobster Nachos, Grilled Shrimp Tacos, Coconut Tempura Prawns to start. Get the Seafood Paella paired with the Grilled Steak with Crispy Garlic & Fries as your main. End with a Banana Split. Budget about ₱1,100/head for a full meal.

I would recommend going on a normal day (without any event) so that you can enjoy the place all to yourselves. You can just opt to eat in the restaurant (it’s rare to find a Day Pool Club that has awesome food!), but I’m sure you’ll be tempted to dance the sunset away in the pool.

Do note that you can’t see the sunset from Bulabog Beach because it sets on the other side at White Beach.
