Truffle, a highly-sought after ingredient in the culinary world, takes the spotlight for Resorts World Manila’s (RWM) annual gastronomic celebration. Since 2015, RWM has chosen a culinary ingredient to highlight every September, to explore and expand the ways it can be enjoyed.
2015 was the year of the chocolate; in 2016, the year of the Matcha, and last year was Coconut. Participating Newport Mall and Resorts World Manila’s restaurants have prepared a line of truffle dishes for both first-timers and seasoned truffle lovers.
Here’s this year’s lineup of truffle dishes:
My liking for truffle is incontestable (as evidenced by my expression of love for it in some of my previous blog posts), which is why I’m so excited to hear that RWM has dedicated a whole month to this ingredient. Some are put off by its earthiness, but for me, that’s actually one of its better qualities. It’s either you hate it, or you love it.
Italian-centric Parmigiano Ristorante Pizzeria (@parmigiano_ph) brings two truffle-based dishes to the table.
Fettuccine Ai Funghi Porcini Salsiccia e Tartufo and Filetto di Carne con Tartufo • Fresh, handmade fettuccine is laden with wild mushroom varieties covered in truffle cream sauce, topped with Italian sausage, sliced black truffles, and freshly-shaved Parmigiano Reggiano.
Pizza Carolina • Woodfire-baked pizza topped with mozzarella, a whole egg, and a generous drizzle truffle oil.
LUMU Filipino Kitchen (@lumubeerhouse) adds their truffle twist to Filipino comfort food with their Sizzling Black Truffle Bulalo Steak. A sizzling steak plate featuring a generous cut of fork-tender beef shank with the marrow intact is swimming in truffle-infused gravy.
Guests who want their truffle meal with rice will appreciate the Garlic Crab with Truffled Mushroom Rice from The Red Crab Alimango House (@redcrabalimangohouse)
Given truffle’s popularity in Italian cuisine, Italianni’s (@italiannisph) already has their own line of truffle-based dishes. This Truffle Mushroom Pizza topped with prosciutto, mozzarella, mushrooms, and arugula is one of their bestsellers.
Resorts World Manila’s signature French fine dining outlet, Impressions, comes up with a trifecta of the most exquisite truffle-based dishes. The first dish is Cold Angel Hair Pasta with Black Truffle Ponzu and Caviar.
Followed by the delicate Mixed Mushroom Soup with Black Truffle Duck Liver Ravioli
The finale of Chilean Sea Bass with Black Truffles, Carrot Risotto, Herb Salsa, and Soy Sauce Cloud is a wonderful medley of flavors and textures that will keep you going for spoonful after spoonful.
UCC‘s Black and White Truffle Fries is a heaping serving of crisp potato wedges with black truffle bits, truffle oil, and parmesan cheese.
For a more substantial and filling meal, UCC also has its Truffle Mushroom Pasta with the truffle taste made even more powerful with the addition of a trio of mushrooms – shiitake, button, and shimeji.
If you’re looking for a twist to your favorite Japanese Ramen, Mr. Kurosawa (@mrkurosawaph) has come up with the Truffle Ramen, exclusive to the Newport Mall branch.
