The Story of FRANCHINO’s Creamy Salmon Dill and Frosted Lemon Cookies

Franchino’s started as my brainchild back in 2012 when I was a college senior. I was thinking of it as a small business that I could still manage even if I’m enrolled in post-graduate studies. Taking a year off from studying, I decided to put up Franchino’s Food. I came from a family that’s really into the food industry. My paternal grandparents own Las Brisas Hotel in Antipolo City and my grandmother was part of the International Food Service Executives Association. My parents used to own restaurants at the domestic airport called Tito Franz Diners and in BF Homes called Love Lock Restaurant. They serve Cebu Pacific, Subic Air, and Tiger Air crew meals and are also the in-flight caterers of the Zobel Family and Ayala Aviation. As for me, I can be proud of using my Biochemistry degree to understand the interaction of ingredients at the chemical level and practice proper sanitation, handling, and sterilization techniques.

The concept of Franchino’s Food is to bring high quality sandwiches that are being served to VIPs during their flights. One of the sandwiches being served is the Creamy Salmon Dill sandwich. I chose this product because I believe that people will find this interesting and new. It’s savory and healthy as well – perfect to serve as canapés. For the UTT 3.0, I decided to release special 4 oz. jars so that it is affordable and very ideal to give away during the Christmas season.

Franchino’s food is also my creative outlet for my baking experiments. All of my pastries are inspired from my dessert cravings that I couldn’t satisfy from bakeries or restaurants. I started experimenting with flavors and textures and even made my own recipes just to achieve what I want. The pastry I’m most proud of is the Frosted Lemon Cookie. I love lemon bars but I wanted that in cookie form. Since I’m allergic to food coloring and artificial flavoring, I use only real lemons. I am confident that there is no other lemon cookie in the market like these since I bake them fresh every day to give it that soft texture and delightful lemony flavor.
