Nothing beats starting your day with a healthy breakfast. The energy that you get from healthy food sets the tone for a great day.

We were not really keen on trying out Le Bistro Vert. We thought it would just be an expensive coffee shop that tries to hitch a ride on the healthy bandwagon. We also thought that it would be yet-another-Chef-Sau-restaurant that offers the same flavors, just in a different restaurant form. But we were wrong…

You have to climb a few steps to a mezzanine floor beside Fraser Place (where Capone’s used to be located).

The green aura of the place welcomes you as you enter the bistro. During breakfast time, you can see the rays of the sun peeking through the windows.

Architect Dan Lichauco did a great job with the green concept. It’s as if you are stepping into a green glass house. We thought that the golden bamboo stenciled on the wall was a bit tacky, though (parang pambata).

The Aquarius Mural on the wall was a great idea. We asked about it, but the waiters didn’t know the story behind the artwork. Maybe all the owners (Chit Juan, Jeannie Javelosa and Reena Francisco) are Aquarians?

It’s nice that they’re attempting to grow herbs at the back of the restaurant. Always a refreshing sight to see! 🙂

Since the bistro is co-owned by the founders of Echo Store, there is a mini-Echo deli selling exotic organic products. We bought this Tamarind Concentrate for P120.

The Echo deli display of sausages and bread was not that appetizing — maybe it’s because it is located under the stairs, which is a no-no in terms of feng shui, especially for a food product.

We were given free camote chips while we waited for our food. It was too oily. I’m hoping they can find a way to make it crispy without it being so oily.

Surprisingly, their chocolate was Hershey’s. For a store promoting “fresh, wholesome, locally grown produce”, maybe our locally grown cacao or tablea can be served instead?

Organic 4-Cheese Frittata Cake (P225 +10%sc). with Arugula and Herb Salad

The Fritatta is essentially an Italian Omelet that could be compared to a crust-less quiche. I like the combination of Quezo de bola, Parmesan, a bit of Cheddar and Cream Cheese. I’m not sure if the eggs and all the cheeses used are organic.

I like how the bitter and slightly grassy taste of arugula matches well with the dressing and the egg. This dish is simple but surprisingly good. Aidan loved it!

Filipino Breakfast (P250 +10%sc). Chicken Longganisa, Garlic Rice, Egg, Achara

The chicken longganisa is light and healthy. You don’t get an overly stuffed feeling after finishing it. For the serving size (good enough for one person), we find its price OK.

Apahap Fillet, Buro Mustasa (P295 +10%sc). Citrus Soy Dressing, Brown Rice Pilaf

We loved this! It’s like eating a sandwich of two layers — smooth and creamy fish fillet with buro (fermented shrimp) — wrapped with mustasa leaves. The fish tasted fresh and clean, and I thought that the buro was just perfect without that offensive, fermented taste.

We brought Joshua to his pre-school, so it was just Aidan and baby Raphael who joined us for breakfast. Here is a cute picture of 6-month old Raphael. 🙂

The cakes are from Jennifer Silayan of Doof Cakes.

Pandan Sansrival (P150 +10%sc). We tried the sansrival. It is the creamier type (ala M Cafe’s sansrival) versus the usual crunchy ones. The desserts are just OK and nothing to really rave about.

Overall, we recommend it, especially when you are looking for a healthy breakfast in the heart of Makati.
