AGOS is a Filipino-Spanish restaurant by Chef Myke Tatung Sarthou inspired by Madrid Fusion and the 250 years of Manila-Acapulco Galleon Trade.  The name means "flow" or "current" (of water).

The restaurant is designed like a cruise ship boat and will be beside the new galleon museum in SM Mall of Asia near IMAX.

We dined with Chef Tatung who shared with us the story behind his new resto and his Agos' specialties ...

AGOS MENU: Kinilaw/Paellas | Abre Ganas at Picapicas/Sopas | Ensalada at Gulay/ Pancit | Mga Ulam na Lamang Dagat/ Live Caught Seafood | Mga Karneng Ulam | Mga Karneng Ulam/ Kanin | Panghimagas at Inumin

The restaurant is narrow and designed lengthwise. Make sure to reserve the circle couch table for added privacy.

Lumpiang Sariwa (P180). Tri-colored tender crepes filled with sauteed vegetables served with a sweet peanut-garlic sauce.

A simple innovation using ube and pandan colors for the crepe wrap with lumpia vegetables.

It's healthy and light with a yummy peanut sauce.

Kinilaw Platter (3 oysters, 100grams tuna - P310). Our fresh seafood is served with garnishes on the side. Mix and season your own kinilaw with our selection of vinegars and aro-en gourmet sea salts.

Sustainably line-caught tuna with fresh Aklan oysters served raw with vinegar, garnish, and different gourmet salts from Pangasinan.

Salt in Filipino cuisine will be the theme of Chef Tatung's first international talk in Madrid Fusion in Madrid this coming January 2017.

Tuna (100 grams - P220). I like the kinilaw with bits of pomelo, chili,and vinegar.

Oyster (6 pcs - P220). The Aklan oysters are so good just fresh with a bit of salt.

Chicken Sisig Lettuce Wraps (P330). Looking for a healthy alternative to sisig? A DIY chicken sisig lettuce taco set with crispy taro strings with mango sauce.

The healthier sisig using chicken instead of pork served Chinese-style wrapped in lettuce with crispy taro strings and a matching sweet mango sauce.

It's alway great to dine with the chef and with friends like Jen Villoria who loves and champions Filipino Food internationally.

Paella Fiesta Filipina (P560). Something that has become our own. This paella is cooked with a festive mix of seafood, chicken, smoked pork jowl and vegetables and given its beautiful color with achuette oil.

The paella is served with generous toppings of squid, shrimp, mussels, clams, chunks of chicken and pork just like how they serve it in Spain but using achuete oil to make it our own version.

Pollo con salsa Tsokolate (P270). A rediscovered recipe from turn of the century Philippine kitchens: Chicken braised in Dark chocolate sauce. Definitely worth keeping.

I love all the food at Agos, but this is my personal favorite - Chocolate Chicken using Tablea for its savory sauce.

Zarzuela ZamboangeƱa (mixed seafood - P610). A Tausug classic, the pianggang re-imagined. Black Tausug Curry made with burned coconut, pampa itum, cooked with your choice of mixed seafood or Curacha (spanner crabs). One dish worth discovering.

I've been looking for Pianggang ever since Chef Tatung cooked it during his talk at Madrid Fusion Manila 2016.

Finally, you can eat a better Piannggang version in Agos. It's like a curry sauce but with a burnt coconut taste.

Chef Tatung's 3-Cheese Bibingka delight (P180). This sweet-savory dessert from gooey heaven will surely get you hooked. Make it even more special with dollops of our decadent itlog maalat custard.

End your meal with a bibingka cake topped with 3-cheese and a sweet, creamy salted egg sauce! Yum yum!

Freshly brewed Philippine Herb Tea pot (good for 4 - P240).

Order tea with kalamansi to clean your palate and to help with your digestion.

Overall, Agos is highly recommended and gets my vote as the Best New Filipino Restaurant in 2016!

Start with the Kinilaw and Chicken Sisig Lettuce Wraps as appetizers. It is the only place where you can taste Pollo con salsa Tsokolate and Zarzuela ZamboangeƱa. Order the 3-Cheese Bibingka Delight in advance to end the meal. Budget about P700/head.

It's a great place to bring your balikbayan and tourist friends for an memorable Filipino food experience in SM Mall of Asia.
