TXANTON: Jamon Iberico de Bellota & Finest Spanish/French Wine Tasting!

TXANTON (pronounced as shan-ton) is the first Jamóneria in the Philippines and bodega showcasing the finest Spanish and French wines.

Its name is a tribute to Paulino Txanton Aboitiz, who was the first of his family to arrive in Manila in 1898. It is the retail sister company of Antique Wine Collections (AWC) Philippines, which supplies the finest wines to hotels and restaurants in Manila.

Txanton is divided into 3 sections. The biggest area is dedicated to La Tienda (The Shop).

They serve the best Jamón Ibérico de Bellota from the four designated regions in Spain: Guijuelo (Salamanca), Huelva (Jabugo), Valle de los Pedroches (Cordoba), and Extremadura

Txanton is dedicated to educating the Philippine market on the origins of Jamón Ibérico and how best to enjoy it.

The Jamón Ibérico is vacuum-packed in the store and relatively cheaper than that of other delis in the metro.

The wine section here is dedicated to fine wines below P2,000 from Spain, France, and other wine producing regions.

They also have a good selection of sherry wines, which is the best pairing for the Jamón.

The second part of the resto is La Sala de Cata (The Tasting Room), which you can book for P35,000, consumable, good for 10-12 people for a private tasting of Jamón, wines, and special set menu.

This is also where they use their finest wine glasses from Zalto.

Zalto glasses are light and delicate and enhance the flavor of the wine.

The third part is called La Gran Añada (The Great Vintage), which you can book for P60,000, consumable, for 10 people for that exclusive private dining session.

The room is a wine cellar for their collection of the finest and rarest wines from Bordeaux, Burgundy, and Spain.

The store also carries special wines from the US, like the Screaming Eagle from Napa Valley.

Txanton is for foodie lovers of Jamon and fine wines. You can go here for pre-dinner tapas or a Jamon-themed lunch or dinner.

The wine bottle is presented on a customized stand to give tribute to the wine.

We had a wine glass tasting experience using the same Almirez red wine and drank it from three different glasses: Schott Zwissel (right), Stölzle (left), and Zalto (middle).

The Zalto glass provided the best experience, balancing the smell and flavor of the wine. You should try it for yourself to really see how the type of glass enhances your wine experience.

Tasting of Jamón Ibérico de Bellota (P750). Ibérico Bellota Guijuelo (Salamanca), Ibérico Bellota Extremadura, Ibérico Bellota Huelva (Jabugo), Ibérico Bellota Pedroches (Cordoba).

We love the Extremadura and Pedroches, both tasty but the latter has a more peppery taste and a longer meaty finish.

The Ibérico Bellota tasting is best paired with bread. You can order some cava to clean your palate in between.

The fat of a fine Jamón should melt when you rub it.

You can order a Pan con Tomato plate of bread, tomato, garlic, and olive oil.

You rub the garlic and tomato on the bread and dip it in the oil, just like they do in Barcelona.

You can have different salt options--truffled salt, rock salt, rosemary salt, and iodized salt.

We love this Jamón rolled over vegetable salad with a simple sweet tomato sauce.

Fried Eggs with Jamon Iberico (P450 +10% service charge)

Another Spanish comfort food of potato chips topped with fried egg and slices of Jamón Iberico. Filling and fun to eat.

Jamón pate served two ways--one as a cheesy creamy pate and the darker one, mixed with PX (Pedro Ximénez).

Tortilla Española (To Share - P325 +10% service charge)

A simple well-executed potato Spanish omelette. The potato is not dry coated with a thin layer of egg.

Overall, an awesome place to enjoy Jamón Ibérico de Bellota and the finest Spanish and French wines in Makati!

I recommend the Tasting Plate of Jamón Ibérico de Bellota and a Spanish red wine like Almirez or Emilio Moro. Order the Jamón Iberico Roller or Fried Eggs with Jamon Iberico as well. Budget about P1,500/head.

Make sure to make a reservation before you go.
