About UTT 2015: Most Remarkable Ultimate Taste Test Ever @AyalaMalls! (Photo Essay)
Tarlaqueña is a family catering and services owned by Ms. Dinna Tolentino.
Their best-selling dish is the Callos Ala Tarlaqueña, a recipe passed down by her grandmother from Tarlac. Callos or Ox tripe stew was introduced here in the Philippines during the Spanish Colonial era. Tarlaquena’s Callos used the traditional cooking method “siga” or slow cooking using an open fire. It is flavored with spicy chorizo and is quite rich, thick and sticky.

Foodies like the dish because of the texture. Tender tripe from the ox feet melts in your mouth that goes well with the spicy chorizo. It’s a very enticing dish though moderation is still recommended because it’s sinfully high in cholesterol. 🙂
Crisp and creamy croquettes are made throughout much of Spain. The Chicken Croquettas of Tarlaqueña are characterized by their crispy, deep-fried exterior, firm and meaty with chicken chunks. Best paired with their homemade Lemon Aioli Sauce.
