Update 5/27/16: How to Make the Best Classic New York Cheesecake by @CheesecakebyGuy? (Recipe)
Gregory Guy is an Atenean Chef famous for his light, creamy, and fine cheesecakes. He took up culinary studies in Le Cordon Bleu and trained in the restaurants of Joel Robuchon in Paris and Jean Georges at The Mark in New York.
He finally opened his first cafe at Eastwood Mall recently, where he serves his signature omelettes, paninis, pasta, cheesecakes, and cheesecake ice cream.
We were at Cheesecakes by Guy to celebrate the birthday of my wife over lunch with our friend, Tina and my brother, Rommel. Here’s our experience…

Cheesecakes by Guy is located at the 2nd Floor of Eastwood Mall, in the outdoor area beside Italianis (former location of La Creperie).
It’s a popular dessert place after lunch or dinner, where you can order the famous cheesecake flavors.

✮ Triple Caviar Cheesecake by Guy (TASTER 3″ P500 / MINI 5″ P1,000).
You’ve got to order this triple caviar savory cheesecake in advance, which is a good appetizer to start with and spread on top of bread.
It’s very light, creamy, cheesy, with a bit of saltiness from the caviar. Sarap! Worth every calorie. 🙂
The Cheesecakes by Guy Menu offering is limited by the size of the kitchen.
✮ Spinach and Goat’s Cheese White Egg Omelette (P240).
The white omelette was so smooth, like pancake. This is the right way to cook the egg white.
The omellete is fluffy soft with goat cheese and juicy spinach. Highly recommended! 🙂
The sparkling lemonade gets you in a bubbly mood and stimulates your appetite.
This tastes like Ginger Ale with sprite.
✮ Maple Citrus Glazed Salmon (P520). Orzo Salad with Spring Vegetables.
The salmon was also cooked well. Every bite was juicy and tasty, with an Orzo pasta that looks like big, long grains of rice mixed with vegetables for a complete meal.
✮ Mac and Cheese (P260). Gruyere, Mozzarella, Cheddar.
The macaroni is coated in three kinds of cheese and satisfies your cheesy craving. The portions are big enough to be shared.
Greek Grilled Chicken (P270). Cucumber, Tomato, Onion, Olive, and Feta.
The panini bread needs improvement.
Mocha Coffee (P160) with Home Made Chocolate Syrup.
Try this coffee mixed with his homemade chocolate syrup, which is not too overpowering.
Organic Passionberry Fruit Tisane (P150).
My wife likes the refreshing berry tea to stimulate digestion.
Red Velvet (P120/slice). 2 layers of moist red velvet cake with a cheesecake layer in the middle all covered in our cream cheese frosting!
A Filipino favorite, and I like that it’s not too sweet but still has a satisfying red velvet flavor.
Raspberry Cheesecakes (P165). A berry good cheesecake that tastes as refreshing as it looks.
I like Gregory Guy’s cheesecakes because they’re light and hindi nakakaumay. You really enjoy every slice.
Home Made Cheesecake Ice Cream (P85/scoop). Raspberry, 65% Dark Malagos Chocolate, Green Tea.
Gregory’s Ice Cream is made from the same batter used to create the cheesecake so you can enjoy the same yummy taste, but in ice cream form.
✮ Molten Lava Chocolate Cake (P200) with Cheese Cake Ice Cream.
He serves a Malagos Dark Chocolate Molten Lava cake with his homemade cheesecake ice cream. Really good! 🙂
We also love his ice cream sandwiched between homemade graham crackers. 🙂

I like Chef Gregory Guy’s cheesecake philosophy of having light, well-balanced flavors, with the ingredients speaking for themselves–a philosophy he also applied to the rest of his food.
If you’re going for lunch, don’t forget to order the Spinach and Goat’s Cheese White Egg Omelette, Maple Citrus Glazed Salmon, and Mac and Cheese.
If you’re going for dessert, I recommend the Molten Lava Chocolate Cake and Ice Cream Sandwich.
The paninis need improvement and the ambiance does not give justice to the quality of food that the restaurant offers.
Budget about P600/head for lunch with dessert.
Final tip: pre-order the Triple Caviar Cheesecake if you want to dine to impress. 🙂

We have tried their cheesecakes before and they are so rich and so delicious! The price for value is good. Cheesecakes by Guy does not disappoint!
