IKKORFYU FUKUOKA RAMEN is a Tonkotsu ramen from Yamagoya Ramen of Japan, which has been around since 1970, specializing in Chikuho noodles. Their original store in Manila is in the East Wing of Shangri-La Mall, and a bigger branch has opened in SM Aura.

Ikkoryu Fukuoka Ramen on Level 5 is one of the most popular restos in Shangri-La Plaza's East Wing.

It gets full during peak lunch and dinner hours. They have a ramen bar counter if you want a quick ramen fix.

It has a nice and compact ambiance, with wooden panels decorated with Japanese characters surrounding the resto.

They specialize in Tonkotsu ramen, which uses pork broth simmered for hours.

Once the Tonkotsu is served, make sure to inhale the rich pork aroma before digging in. Best to immediately eat it while it's hot!

★ AJITAMA TONKOTSU (P330 +10% service charge). Ikkoryu original hearty Tonkotsu ramen garnished with Chashu, green onion, bamboo shoots, wood ear and dried seaweed. Topped with a special half-boiled egg that is fully marinated with a special blended soy sauce base.

Order the basic Tonkotsu ramen with the chashu (pork slice) and the ajitama (special hard-boiled egg). Sometimes, we just like the basic taste with its very rich, pork-y flavor.

I recommend ordering the noodles hard, which is the al dente version to have that chewy, bouncy bite despite the thin noodles. The soft/normal variant does not really have texture, and it slides through. Order the very hard type to really enjoy the noodles.

Best to slurp it, which is a courteous way of enjoying the ramen in Japan.

★ BLACK GARLIC TONKOTSU (P380 +10% service charge)Tonkotsu soup mixed with special roast garlic oil.

For a more authentic Chikuho local way of eating, they say that you have to lightly add ground sesame seeds with red ginger pickles in the soup.

For us, we already love the strong, roasted garlic oil flavor of the Black Garlic Tonkotsu on its own. No wonder it's one of the best sellers! If you adore garlic and enjoy strong flavors in your ramen, order this.

SPICY TOBANJAN TONKOTSU (P380 +10% service charge). Ramen with spicy Tobanjan paste, resulting in an absolutely appetizing and wholesome flavour.

Even though I ordered the spicy version, it was not as spicy as I expected -- and not as enjoyable to eat as the Black Garlic Tonkotsu.

We ordered Karaage for the kids. It's always a hit with them, thanks to the crispy skin and juicy meat.

The Gyoza was also good. It had a nicely toasted texture and juicy insides.

We sometimes order rice to pair with the Karaage or to use for soaking up the soup in the last portions of the Tonkotsu. :)

SAPPORO-PREMIUM BEER (Bottle) (125 +10% service charge).

For a more authentic feel, order a bottle of refreshing Japanese beer -- the premium Sapporo. :)

For us, Ikkoryu has one of the best ramen noodles in town. Our personal favorites are the Black Garlic Tonkotsu ramen and the basic Ajitama Tonkotsu ramen. :) We like the fact that you can specify the doneness of your noodles -- soft, normal, hard and very hard.

We still can't get enough of ramen, and it's a good thing there are many restos to choose from. Perfect for the rainy season in Manila!
