The Kefir Culture by Jeren
ULTIMATE TASTE TEST DISCOVERIES SERIES
Kefir is starting to become a buzzword in the Healthy Circle. All I know is that it is 100% probiotic like drinking Yakult, it is more nutritious than yogurt, and Chinese families use it as a secret natural healing drink. Kefir Power, promoted by Cory Quirino, was the first one to offer Kefir in the local market. Milk Kefir is also now available from The Kefir Culture in Arama, Serendra.
I got interested in Kefir because of Jeren's Kefirlicious Ice Cream. They joined the Ultimate Taste Test to introduce their commercially available Milk Kefir, which rated 3.4 out of 5.0. Some people who understand the health benefits of Kefir liked it. Some people did not like it because of its super sour taste --- more sour than yogurt. Some people think it is expensive but it is relatively priced lower than its competition.
MY MILK KEFIR STORY
by Jeren Cabral
As a Food Technologist and Enzyme Therapist, I am very curious with and interested in natural food that strengthen our body and boost our immune system. This inquisitiveness led me to study food enzymes and their beneficial effects on our physical well-being. With this knowledge, I was able to help quite a number of people who were suffering from different kinds of incurable diseases like diabetes, asthma, lupus, arthritis and cancer, to name a few. About a year ago, my Chinese friend introduced me to kefir. He’s taking it on a daily basis to cure his illnesses. Curious, I started my research work on kefir immediately. Impressed with my findings, I began experimenting and developing “milk kefir” out of raw milk and a tablespoonful of kefir grains. Kefir is a cultured, enzyme-rich food (both microbial and digestive enzymes) filled with friendly micro-organisms that help balance our “inner ecosystem.” Though it tastes a bit sour, kefir is refreshing and more nutritious and therapeutic than yogurt because it supplies complete protein, essential minerals, and valuable B vitamins. After numerous trials and errors, I was able to master the fermentation process of kefir using fresh raw milk. As my “milk kefir” passed the discriminating taste of my friends, I began to market it to my other acquaintances who recommended it to their own sets of friends and acquaintances. As the demand for it increased, I decided to venture into mass production. Those familiar with its selling price in the market will certainly be surprised to find out that my pre-introductory price is only P240.00 per liter. To maximize its health benefits, I integrated milk kefir in a 7-day diet program. So far, all of those who underwent this diet program got positive results like regular bowel movement, greater stamina, resistance to illnesses, and weight loss of 5 to 10 pounds. Studies show that kefir could treat or cure allergies, acne, arthritis, rheumatism, wrinkles, gout, liver diseases, kidney stones, gastritis, pancreatitis, ulcers, constipation, diarrhea, hypertension, heart diseases, lung infections, yeast infection, and many other illnesses. To make kefir more enjoyable and refreshing, we may add fresh fruits, muscovado or honey into it. With this special mix, our children will surely love it and ask for more. I have tried the mango kefir ice cream and its absolutely delicious. Mango Sorbet only it is healthy. Much much better than yogurt. I recommend it to all the ice cream lovers yet at the same time health conscious (aren't we all nowadays).

I've been wanting to try kefir for a while...I've heard so many good things, and then all the great reviews here! I'm a huge fan of probiotics, and I take mine in a supplement called Flora Source. But it's nice to get probiotics and enzymes in food as well, I'm definitely going to try kefir milk soon.

hi nutella,
kefir is far superior than your low fat milk since its nutrients are partially digested it is easily absorbed by the body, it contains good microorganism that can balance our microflora which is good for our digestion, so it is very safe to replace your milk. it is even recommended for lactose intolerant people and for those on a diet.
